It's always a special time of year for us when the harvesting equipment hits the fields for the first time in a season. There is something about the smell of the onions or shallots being topped and placed into windrows which gives a sense of a reset on a difficult period. This week we have started to lift our UK shallot crop. These will be brought into store later this week for curing, a process of drying them out to seal the neck and protect from disease as well as creating the crisp golden skin. This crop will be destined for supermarket shelves in the coming weeks.
