It may seem a little lazy, but for time-pressed cooks and food manufacturers, ready peeled or chopped garlic is a real time saver.
We use the same assured growers as our non-prepared garlic, then crack and peel the cloves using specialist machinery, finishing off by hand.

How to store them
Keep peeled cloves in the fridge in a container that lets a little air in and out. Do not store in a completely sealed container, as gases build up inside which could affect food safety.
